This juicy chicken and courgette bake tastes of Greece with flavours of lemon and oregano. We have added some olives and feta to make it moorishly salty. Best of all, this dish is a breeze to make, only requiring one tray and a hot oven to get big Mediterranean flavour. My big fat Greek tray bake!
