Preheat oven to 425 F while you peel and dice the sweet potatoes and drain and dice the tofu.

In a large bowl, combine the sweet potatoes and tofu. Add garlic powder, Spanish paprika, salt, pepper and cornstarch. Toss until all pieces are evenly coated.

Transfer the coated tofu and sweet potatoes onto a baking sheet covered with parchment paper, making sure they are spread out into a single layer. Bake for 30-40 minutes or until crispy and golden.

While the tofu and potatoes are baking, cook the brown rice according to package directions.

In a large skillet, heat sunflower oil over medium-high heat. Add kale and sauté until just wilted. Turn off the heat and set aside.

For the Maple-Tahini Sauce, whisk together tahini, maple syrup, lemon juice and salt in a small bowl. Add water, 1 tablespoon at a time, until you reach your desired consistency.
