Remove the ribeye steak from the fridge and allow it to rest at room temperature for 30 minutes.

Pat the steak dry with kitchen paper towels to ensure a good sear.

Heat a heavy-based skillet over high heat and add the oil. Wait until the oil is hot and begins to smoke.

Evenly season each side of the steak with the salt and pepper. Immediately place the seasoned steak in the hot skillet.
