These scrumptious 5-ingredient no-bake peanut butter bars are the perfect vegan dessert or snack. A creamy peanut butter base combined with a smooth, rich dark chocolate ganache topping will leave you craving more.
Line a 9x5 inch rectangular baking dish with parchment paper and set aside.
2
In a medium-sized mixing bowl, combine 1 cup smooth peanut butter and 1/2 cup maple syrup. Stir until evenly mixed and smooth.
3
Sift in the coconut flour and mix until combined. As the dough gets thicker, use your hands to knead it into a ball.
4
Press the peanut butter dough evenly into the bottom of the prepared baking dish, using the back of a spoon or a spatula to smooth the surface.
5
Place the dish in the freezer while you prepare the chocolate ganache.
CHOCOLATE GANACHE
6
In a small bowl, combine the chopped vegan dark chocolate, 1/4 cup smooth peanut butter, and melted coconut oil.
7
Melt the mixture using a double boiler or by microwaving in 30-second bursts, stirring between each burst to avoid burning the chocolate.
8
Stir until the chocolate ganache is smooth and shiny.
9
Remove the peanut butter base from the freezer, and pour the chocolate ganache over it, spreading it evenly with a spatula.
10
Return the dish to the freezer for about 10 minutes, or until the chocolate ganache is set.
11
Slice the dessert into 16 bars and serve.
STORAGE
12
Store the peanut butter bars in an airtight container in the refrigerator for up to 1 week or in the freezer for a longer shelf life.
13
Defrost at room temperature for 2 hours before consumption. Note that the peanut butter layer will have a drier texture after freezing, but it remains delicious.
