Freeze the tofu overnight and then thaw. Once defrost, press out as much water as possible from the tofu.
TOFU MARINADE

Prepare your miso by whisking 1 tablespoon dry miso soup mix with 1 cup warm water.

Cut tofu into 1-inch cubes and add to the miso marinade. Refrigerate for 30 minutes.
TOFU GLAZE

Preheat your smoker to 250 degrees. Drain tofu from marinade, coat it with 1/2 cup of BBQ sauce, and pop on smoker for up to two hours.

When the tofu starts to feel a bit firm to touch on the outside, remove it from the smoker, coat again in the BBQ sauce and put it back on smoker for another 20 minutes.
RICE

In the meantime, cook the rice according to package instructions, replacing water with coconut water to enhance flavor.
ASSEMBLY

Prepare your avocado, red bell pepper, carrot, and pineapple by slicing or shredding as necessary.

Once the tofu is ready and the glaze sticky, assemble the bowl by adding in rice, smoked tofu, pineapple, avocado slices, shredded carrot, and sliced red bell pepper.
