11 g fresh baby spinach
2 tbsp vegetable oil
1/2 tsp turmeric
2 tbsp double cream
1 tbsp lemon juice
plus lemon wedges to serve
1 tsp kashmiri chilli powder
1 1/8 g paneer
cut into small cubes
2 cloves garlic
minced
1 tsp cumin seeds

In a large pan, heat 1 tbsp of vegetable oil over medium heat.

Add the fresh baby spinach and sauté until wilted. Remove from the heat and set aside.

In the same pan, heat another tbsp of vegetable oil over medium heat.

Add the cumin seeds and turmeric, and cook until fragrant, about 1 minute.

Add the garlic and green chilli, cooking for another minute.

Stir in the cooked spinach and cook for about 5 minutes.

While the spinach cooks, blend it with a hand blender or in a food processor until smooth.

Return the spinach purée to the pan, and add the paneer cubes, kashmiri chilli powder, and a pinch of salt. Cook for about 5-7 minutes.

Add the double cream and cook for 2 more minutes.

Stir in the lemon juice, mixing well. Taste and adjust seasoning if needed.

Serve hot, garnished with extra kashmiri chilli powder and lemon wedges on the side.
