Plucked from the crocus sativus plant, Spanish saffron is the crimson-red stigma in the flowerâs center. Commonly called âthreads,â saffron has a floral scent and a subtle sweetness. To use this delicate spice, grind a couple threads with salt in a mortar and pestle until a fine powder. Itâs great for seasoning rice, risotto, chicken, seafood and lamb.
