Heat 2 tbsp of the collected garlic oil in the skillet over medium-high heat. Add the seasoned rice and mix to coat. Cook, stirring occasionally, until heated through (about 5 minutes). Stir in the remaining fried garlic and transfer to a bowl. Keep warm.

Heat the remaining garlic oil in the skillet over medium-high heat, adding more oil if needed. Crack the eggs into the skillet and season with salt. Cook until the whites are almost set (about 2 minutes).
