A delicious and easy-to-make Cuban-style rice bowl with diced lean ham, black beans, and fresh salsa with a hint of lime for a burst of flavor. Serves 4.
In a medium saucepan, cook 2 cups of uncooked medium-grain brown rice according to package instructions. Set aside.

Coat a medium skillet with cooking spray and heat over medium-high heat.

Add diced lean ham to the skillet; cook, stirring often, until browned, about 2 minutes. Remove from skillet and set aside.

Add drained black beans, ground cumin, dried oregano, and 1/4 cup of water to the same skillet; heat over medium heat, stirring, until hot, about 3 minutes.

Remove the skillet from the heat; stir in fresh lime juice and season with a pinch of table salt, if desired.

Divide the cooked brown rice among 4 bowls; top each bowl with the cooked ham, black bean mixture, salsa, and chopped cilantro.

Garnish each bowl with a lime wedge and serve. Makes 4 servings.
