1
Preheat the oven to 200 degrees F.
2
Heat the olive oil in a large skillet.
3
Add the onions and peppers, and saute until starting to soften, about 4-5 minutes.
4
Add the ground beef, cook until browned, then season with taco seasoning, salt, and pepper.
5
Drain any excess oil from the pan and transfer the beef to a plate or bowl; wipe out the skillet.
6
Line up your tortillas on a large work surface, or, if you're short on space, just do them one at a time.
7
Spread about 1/2 cup of freshly shredded Mexican blend cheese on each tortilla, covering the entire surface.
8
Divide the seasoned ground beef evenly between the tortillas, spreading it on one half of each tortilla.
9
Melt 1 tablespoon of unsalted butter in the skillet and place the tortilla face-up in the center.
10
Cook on medium heat until well browned, then use a spatula to fold the cheese-only side over the beef side.
11
Press down slightly to get the cheeses to melt together.
12
Remove from the skillet and place on a wire rack in a 200 degree F oven to keep warm.
13
Repeat with remaining quesadillas, adding more butter to the skillet as needed.
