Preheat the oven to 400F (200C). Trim any excess skin and fat from the chicken thighs and pat dry.

Mix 2 tablespoons of the olive oil with the minced garlic. Brush this mixture over the chicken thighs. Season with salt and pepper, then set aside.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Pan fry the pepperoni until it is crisp. Use a slotted spoon to transfer the pepperoni onto a paper towel lined plate.
