Preheat the oven to 400F (200C). Trim any excess skin and fat from the chicken thighs and pat dry.

Mix 2 tablespoons of the olive oil with the minced garlic. Brush this mixture over the chicken thighs. Season with salt and pepper, then set aside.
COOKING

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Pan fry the pepperoni until it is crisp. Use a slotted spoon to transfer the pepperoni onto a paper towel lined plate.

In the same skillet, sear the chicken thighs until well browned on both sides. This could take up to 10 minutes. Transfer the chicken to a plate and pour most of the oil out of the skillet.

Reheat the skillet and add the sherry to deglaze the pan, scraping up any browned bits with a wooden spoon.

Add the onions and the remaining tablespoon of olive oil. Cook over medium-low heat until the onion has softened, around 5 minutes.

Mix in the cherry tomatoes, capers, chopped basil leaves, and chilli flakes. Cook for another 5 minutes, until the tomatoes start to break down.

Place the chicken thighs back among the tomatoes in the skillet and transfer to the oven. Cook for 20 minutes, uncovered.

Scatter the bocconcini over the chicken and season with additional salt and pepper if needed. Turn on the broiler and place the skillet near the top to melt the cheese. This should take a couple of minutes, so keep an eye on it.

Once the cheese is melted and bubbly, remove from the oven. Garnish with the crispy pepperoni before serving.
