Bring a large pot of water to a boil, add a pinch of salt and the fettuccine pasta. Cook according to package instructions until al dente. Reserve 1/4 cup pasta water then drain the pasta and set aside.
MUSHROOMS & BROCCOLI

In a large skillet, heat sesame oil on medium heat. Add in the sliced oyster mushrooms and minced garlic, saute for 2-3 minutes till mushrooms start to soften.

To the same skillet, add the broccoli florets, grated ginger, and red pepper flakes. Cook, stirring regularly, for around 5-7 minutes, or until broccoli is just tender.
SAUCE

Stir in tamari sauce, honey, and 1/4 cup of the reserved pasta water into the skillet. Cook for a minute till the sauce comes together.
ASSEMBLY

Add the cooked and drained pasta to the skillet, tossing well to ensure the pasta is well coated with the sauce. Adjust the seasoning, adding salt if needed.
GARNISH

Over medium heat, lightly toast the cashew nuts in a separate dry pan till they are golden and aromatic. When ready to serve, top the pasta with the toasted cashews.
