In a bowl, combine the sesame oil, hoisin sauce, tamari sauce, black pepper, water, brown sugar, and 1 teaspoon of the cornstarch to create the sauce. Set this aside for later.

In another bowl, lightly coat the thin strips of chicken breast in the remaining 1 teaspoon of cornstarch.

Set your Instant Pot to 'saute' mode and pour in the olive oil.

Add the chicken and saute for about 3 minutes.

Add the minced garlic, grated ginger, the sauce from the previous step, sriracha sauce, sliced scallion and salt.

Saute this mixture for another 4 minutes. After it's ready, turn off the Instant Pot and let the dish rest for a bit before serving.
