Next, add the shrimp to the skillet. Cook the shrimp until just opaque in the center. This typically takes about 5 minutes of stirring frequently. Once done, transfer the shrimp to a plate and set aside.
3
In the same skillet, heat another tablespoon of olive oil. Add the chopped onion and saute until it becomes translucent.
4
Introduce the chopped bell peppers and sliced spicy chorizo sausage. Cover the skillet and cook for about 5 minutes, stirring occasionally to prevent any sticking.
5
If needed, add another tablespoon of olive oil to prevent the vegetables from sticking.
6
Combine the chopped zucchini and minced garlic in the skillet and give everything a good stir.
7
Proceed to add the tomato paste, chicken broth, salt, black pepper, basil, thyme, oregano, and red pepper flakes.
8
Simmer everything for another 5-7 minutes until the sauce thickens and the vegetables are tender-crisp.
9
Return the cooked shrimp to the skillet. Allow everything to cook for another 3 minutes so that all the flavors meld together beautifully.
