Season the chicken breasts with salt, garlic powder, and black pepper. Drizzle olive oil over it ensuring all pieces are coated evenly. Leave it to rest for 15 minutes.

Heat 2 tablespoons of olive oil in a large pan over medium-high heat. Add in chicken breasts and sear them 4 minutes each side. The chicken doesn't need to be fully cooked at this stage. Once browned, remove and set aside.

In the same pan, add the finely chopped onion along with red pepper flakes and a little salt. Stir while scraping up the browned bits from the pan, cook for 2-3 minutes until the onion becomes translucent.

Add cherry tomatoes into the pan and cook until they start to burst. Drizzle a little more oil if needed. Stir in minced garlic and let it cook for another 3-4 minutes until it emits a fragrant aroma.

Now pour in the can of crushed tomatoes, followed by heavy cream and unsalted butter. Add half of the finely chopped basil leaves, then let the sauce simmer for 5 minutes.

Return the semi-cooked chicken into the pan, cover and simmer for another 10 minutes or until the chicken is thoroughly cooked.

To serve, sprinkle each chicken piece with mozzarella pearls and the remaining chopped basil.
