1/2 tsp cumin
3 tbsp adobo sauce

1 tbsp lemon juice
3 cloves garlic

2 tbsp tomato paste

Dry the drained tofu with a paper towel and then cut into 1 inch cubes.

Heat the olive oil in a large pan over medium heat, add the tofu cubes and fry until golden brown on all sides. Remove the tofu and set aside.

In the same pan, add the minced chipotle pepper, adobo sauce, minced garlic, lemon juice, tomato paste, honey, smoked paprika, cumin, salt, and water.

Stir well to combine and bring the sauce to simmer.

Add the fried tofu back into the pan and stir to coat.

Simmer the sofritas for another 10-15 minutes or until the sauce thickens, stirring occasionally.
