Cook Jasmine Rice according to package instructions, then set aside to cool.

Preheat the oven to 400°F (200°C) and line a baking dish with aluminum foil.

Place the chicken breasts in the center of the prepared baking dish.

Arrange broccoli florets and carrot slices around the chicken.

Drizzle chicken and vegetables with avocado oil.
