Heat olive oil in a large pan over medium-high heat, and cook bell peppers and yellow onion with kosher salt until just barely tender.

Add garlic and sliced cremini mushrooms, and cook for an additional 3 minutes or until mushrooms have softened.

Pour red wine into the pan, stirring to deglaze, and let it reduce slightly for about 2 minutes.

Pour in the quartered tomatoes, tomato and sweet basil pasta sauce, and drained black olives. Stir and bring to a simmer.

Place chicken breasts into the simmering sauce, submerging each breast completely.

Bring back to a simmer, reduce heat to low, cover and cook for 20 minutes, or until chicken is cooked through and tender.

Remove from heat, and transfer chicken breasts to a plate. Shred the chicken using two forks before returning it to the sauce.

Serve the chicken cacciatore over rice, pasta, or egg noodles with a sprinkle of Parmesan cheese, if desired.
