Combine almond flour and parmesan cheese on a large plate to create the breading station.

Break the eggs into a bowl, whisk until well mixed and set aside.

Place tapioca flour on a separate plate.

Place each pork chop, in turn, between two pieces of plastic wrap. Pound with a meat mallet until each chop is 1/4 inch thick.

Season pork chops with salt and pepper.

Dredge each pork chop in tapioca flour, shake off excess, dip into the egg mix, then press firmly into almond mixture to coat.
