Preheat oven to 350°F. Grease a 9x5 inch loaf pan.

In a large bowl, using an electric mixer, whisk eggs and 1 cup sugar until pale and creamy.

In a separate bowl, melt 4 oz. unsalted butter and let it cool slightly before whisking it into the egg mixture along with the zest from 1 orange, 1 cup freshly squeezed orange juice, and 1 tsp vanilla extract.

Sift in 2 cups all-purpose flour and 2 tsp baking powder, then gently fold them in with a rubber spatula until incorporated.

Spoon the batter into the prepared loaf pan and bake for about 50 minutes or until a toothpick inserted into the center comes out clean.
THE ORANGE GLAZE

Combine the zest from 1 orange, 1 cup water, and 1 cup sugar in a small saucepan.

Bring to a boil, lower the heat and cook, stirring occasionally, until the syrup slightly thickens.

As soon as the loaf comes out of the oven, prick the surface with a thin skewer and pour half the syrup over the top. Allow it to soak in and cool.

Once the loaf has cooled, remove from the pan and drizzle with the remaining syrup.
