Bring a pot of water to a boil, then add the penne pasta and 1 teaspoon of salt. Cook according to the package instructions until al dente. Reserve a cup of pasta water and drain the pasta.

In a large skillet or pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.

Add the red chili flakes and Cajun seasoning to the onion mixture, sautéing the spices for two minutes until fragrant.

Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
