Expiration & Storage Tips
When does semi sweet chocolate expire?
In its unopened state, semi-sweet chocolate can last up to 2 years stored at room temperature. Once opened, it should stay good for up to 6 months if kept in a cool, dry, and dark location. Indulging in your semi-sweet chocolate stash slowly? No problem! You can freeze it to extend its shelf life to over 2 years. Thaw the frozen chocolate in the fridge overnight, then move it to a room temperature area for another day before use.
How do you tell if semi sweet chocolate is bad?
Semi-sweet chocolate that's gone bad will often develop what's called a 'bloom'. The 'sugar bloom' is characterized by a crumbly, grainy texture and a dull, matte appearance, while the 'fat bloom' is a kind of greasy sheen or spots on the surface. The chocolate also might have a stale or off-smell. Don't worry, though - chocolate bloom does not necessarily means the chocolate is bad. It's generally safe to eat but might not taste as good.
Tips for storing semi sweet chocolate to extend shelf life
• Store the chocolate in a cool, dry place, ideally between 60 and 70°F.
• Keep your chocolate away from strong odors, as it can absorb them.
• If you've opened a package of chocolate and haven't finished it, make sure to seal it well. In a pinch, plastic wrap or a resealable bag can work.
• When you need to store your chocolate for a longer period, consider freezing. Package it well to keep out moisture and odors, then let it slowly come back to room temperature when you're ready to use it.
• If you notice a bloom on your chocolate, simply melt it down and it will return back to its usual appealing shiny state.
