Wrap the tofu in a clean kitchen towel and place it on a rimmed baking sheet. Place a heavy object on top, like a skillet or a baking dish, to press the excess water out for 10 minutes.

After pressing, cut the tofu lengthwise into two slices, then crosswise into six sections, giving you 12 tofu squares.

Prepare the sauce by combining the reduced-sodium soy sauce, mirin, toasted sesame oil, and gochugaru in a small bowl.

Separate the dark green top from the scallion and chop it finely. Do the same with the remaining white and pale-green parts on the scallion.

Heat 1 tablespoon of vegetable oil in a nonstick pan over medium-high heat.

Place the tofu in a single layer in the pan and lightly season with kosher salt. Let it cook, without stirring, until golden brown for about 5 minutes on each side. Once cooked, set the tofu aside on a plate.

In the same pan, heat the remaining tablespoon of vegetable oil. Add chopped scallion (white and pale-green parts), garlic, and ginger. Stir it for a minute until softened but not browned.

Put the tofu back into the pan and pour in the prepared sauce. Allow it to simmer.

Lower the heat to medium-low and let the tofu cook in sauce. Turn the tofu cubes a few times and spoon the sauce over to evenly coat them, until the sauce is reduced by about half. This will take approximately 4 minutes.

Place the tofu onto a large plate, spoon the remaining sauce over it, and sprinkle with sesame seeds and the chopped scallion top.
