Sweet Summer Symphony: Pan-Roasted Sausages with Peaches, Potatoes and Peppers
Dive into a harmonious blend of robust savory flavors kissed by the sweetness of summer peaches in this ultimate one-pan meal. Our pan-roasted sausages are coated with a unique spice rub and paired with a sunny medley of peaches, baby potatoes and bell peppers.
In a small bowl, mix together paprika, chili powder, salt, and black pepper. Rub the spice mix over the sausages and set aside to marinate for 15 minutes.

Preheat the oven to 425°F. Line a baking sheet with parchment paper.

Place spiced sausages on one side of the prepared baking sheet.

On the other side of the baking sheet, spread the baby potatoes, peaches, bell peppers. Drizzle the vegetables and fruits with olive oil and sprinkle minced garlic and sage leaves over it. Toss to fully coat.

Brush the sausages and the rest of the ingredients with apricot jam and place the tray in the preheated oven.

Roast for 20 minutes, then flip the sausages and stir the other ingredients before baking for another 20 minutes. Everything should be browned and ingredients cooked through.

Remove from oven, squeeze fresh lemon juice over the dish, and serve immediately.
