Superfood Sesame Rice Bowl with Roasted Chickpeas, Mushrooms, and Kale

Cook brown rice according to package instructions. Drain if needed and set aside.

In a medium bowl, combine chickpeas, 1 tsp olive oil, hot paprika, and salt.

Spread chickpeas on a baking sheet and bake for 15 minutes, stirring halfway through baking. Remove from the oven and set aside.

Heat 1 tsp olive oil in a large skillet over medium heat.

Add chopped onion to the skillet and cook until soft, about 2 minutes.

Add sliced baby bella mushrooms, torn oyster mushrooms, chopped kale, and minced garlic to the skillet. Continue cooking for about 2 minutes, stirring occasionally.

Turn off the heat.

Stir in roasted chickpeas, cooked brown rice, lemon juice, soy sauce, and sesame oil. Adjust seasonings if needed and serve.
