Heat olive oil in a large non-stick skillet over medium heat.

Add chopped yellow onion and sauté until translucent, about 1-2 minutes.

Now, add the garlic and jackfruit. Sauté everything for 5 minutes, while stirring occasionally.

To the skillet, add vegetable broth, 3/4 cup of BBQ sauce, smoked paprika, garlic powder, ground mustard, salt and black pepper. Stir everything well to combine.

Let it simmer over low heat for 10 minutes or until the liquid has mostly been absorbed.
OVEN

Preheat the oven to 400 degrees Fahrenheit. Spread the jackfruit mixture evenly on a baking tray lined with parchment paper.
