Prepare flavorful and tender pinto beans right in your instant pot in less than an hour. This recipe skips the soaking and infuses the beans with a medley of delicious seasonings for a stand-alone dish, or a perfect addition to tacos, soups and salads.
Rinse the dry pinto beans under cold water. Discard any shriveled beans or small stones that may be present.

Turn on the Instant Pot and select the 'Sauté' function. Add the olive oil.

Add the minced garlic to the pot and sauté for about two minutes until fragrant.

Add the rinsed beans, water, salt, black pepper, cumin, and bay leaf to the pot. Give everything a good stir to combine the ingredients.

Secure the pot lid and set the valve to 'Sealing'. Select the 'Pressure Cook' or 'Manual' mode and set the cooking time to 45 minutes at high pressure.

Once the cooking time is completed, allow the pressure to release naturally for 15 minutes. Then, carefully move the valve to 'Venting' to release the remaining pressure.

Remove the bay leaf before serving. Taste and adjust seasoning if necessary.
