In a large bowl, mix the shredded rotisserie chicken with paprika, garlic powder, onion powder, and black pepper.

Heat olive oil and butter in a large oven-proof skillet over medium heat. Add the chopped onion and thinly sliced leeks, sautéing until soft, about 5 minutes.

Stir in the minced garlic and chopped thyme leaves, cook for 1 more minute.
