Immerse yourself in an authentic French bistro experience with these deeply flavored, cheesy caramelized onion potatoes. This side dish recipe requires minimal fuss and pairs wonderfully with a number of mains.
In a large oven-safe skillet, melt the unsalted butter over medium-high heat.

Add the thinly sliced yellow onions to the skillet, along with 3 tablespoons of homemade chicken stock. Saute the onions for about 4 minutes until they become translucent.

Continue cooking the onions for about 15 minutes, stirring occasionally until they are well caramelized and tender. Then, transfer to a bowl and cover to keep warm.

In the same skillet, add the vegetable oil and the scrubbed and diced potatoes. Stir over medium heat for about 8 minutes until the potatoes are crisp and golden brown. Remove from the skillet and set aside.

In the same pan, return the caramelized onions, add minced garlic and sprinkle the all-purpose flour. Stir for 1-2 minutes over medium-high heat until the flour is well cooked.

Pour in the remaining chicken stock and stir the mixture continuously until it comes to a simmer. Season with salt and pepper to taste.

Add the browned potatoes to the pan, stir them in to coat with the onion gravy.

Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the top of the potatoes.

Transfer the skillet to the preheated oven and bake for about 10 minutes until the cheese is completely melted and bubbly.

Take the skillet out from the oven and let it cool slightly. Just before serving, sprinkle French’s crispy fried onions on the top as a garnish.
