In a griddle or cast iron pan, heat the vegetable oil over medium-high heat.

Add the thinly sliced sweet onion, green bell pepper, and cremini mushrooms, and sauté until soft and starting to brown, 10-15 minutes. Remove from the pan and set aside.

Spread unsalted butter on the burger buns and place them on the cooking surface for a few minutes until toasted. Transfer to a plate.

Divide the ground beef into 4 equal balls (4 oz each). Increase heat to high.

Place the beef balls on the heated griddle and use a sturdy spatula to smash the balls down, flattening them into thin patties. Cook for about 1 minute until the meat begins to release from the pan and the bottom is well-browned.

Flip the patties, place 1 slice of provolone cheese on each of the 2 patties, then stack the other 2 patties on top of the cheese-covered patties.
