Grate the zucchini and place into a bowl. Add salt and mix well. Let this sit for 10 minutes to draw out the excess moisture.

After 10 minutes, rinse the zucchini under cool water and squeeze out the remaining moisture. Return to the bowl.

Preheat your oven to 200C (400F). Prepare a baking sheet with parchment paper for easy clean-up.

In the bowl with the zucchini, add the egg, chopped green onions, grated parmesan cheese, minced garlic, flour, baking powder, and some pepper. Stir until well combined.

Using an ice cream scoop or a spoon, drop the batter onto the prepared baking sheet. Flatten lightly with the back of a spoon.

Bake the fritters for 20 minutes, then turn on the broiler and broil for an additional 2-3 minutes until the fritters are golden brown and crispy.

While the fritters are cooling slightly, prepare the dip by simply combining the Greek yoghurt and additional chopped green onions.
