In a large bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, minced garlic, and dried oregano to create the marinade.

Using a meat mallet, tenderize each steak portion by pounding 15-20 times on each side all over. This helps create a more tender steak and allows the marinade to seep better into the meat.

Place the tenderized steaks into the marinade, turning to coat evenly. Season both sides of the steaks with kosher salt and black pepper.
