Lemony Za'atar Chicken Thighs with Creamy Garlic Yoghurt and Herb-infused Rice
Zesty za'atar-marinated chicken thighs paired with a vibrant, herb- infused basmati rice and served with a dollop of creamy garlic yoghurt. A complete meal that brings the exotic flavors of the Mediterranean to your dining table.
Preheat the oven to 220°C. Line a baking tray with parchment paper.

Mix the za'atar blend, the juice of one lemon, olive oil, and a pinch of salt in a bowl. Marinate the chicken thighs in this mixture for at least 15 minutes.

Place the red onion wedges and courgette slices on the baking tray, drizzle with olive oil, sprinkle with salt, and roast in the preheated oven for 20 minutes.

Add the marinated chicken to the tray with the vegetables, skin side up, and bake for 20 minutes, or until the vegetables are tender and the chicken is cooked through.

While the chicken and vegetables are roasting, cook the basmati rice according to package instructions. Once cooked, mix in the dried mixed herbs.

For the garlic yoghurt, mix together the Greek-style yoghurt, minced garlic, the juice of the second lemon, and a pinch of salt.

To serve, spread the garlic yoghurt on one side of the plate. Place the herby rice, roasted vegetables, and crispy chicken thighs on top. Squeeze extra lemon, if desired.
