Season the chicken thighs with 1/2 tsp salt and black pepper.

In a large heavy-bottomed pot, heat 4 tbsp olive oil over high heat until it is very hot.

Add the seasoned chicken thighs and brown on both sides, about 3-4 minutes per side. Remove the chicken thighs and set aside.

In the same pot, add the remaining 2 tbsp olive oil and set heat to medium-high.

Add the thinly sliced onion and cook for 2 minutes until softened.
