Season the chicken thighs with 1/2 tsp salt and black pepper.

In a large heavy-bottomed pot, heat 4 tbsp olive oil over high heat until it is very hot.

Add the seasoned chicken thighs and brown on both sides, about 3-4 minutes per side. Remove the chicken thighs and set aside.

In the same pot, add the remaining 2 tbsp olive oil and set heat to medium-high.

Add the thinly sliced onion and cook for 2 minutes until softened.

Add the thinly sliced red bell pepper and cook for an additional 3 minutes.

Stir in the diced San Marzano tomatoes.

Cover the pot with a lid and cook over medium heat for 10 minutes.

Add the browned chicken thighs back into the pot and season with the remaining 1/2 tsp salt.

Place the lid back on the pot and cook the chicken for about 30 more minutes, until the chicken is cooked through and tender.

Stir in the thinly sliced jalapeño, red chili pepper, finely chopped cilantro, and minced garlic.

Bring the pot to a boil, then remove it from heat.
