Cook the macaroni noodles according to the package instructions. Once cooked, drain and set aside.

In a separate pot, cook the medium grain rice accoring to the package instructions.

While the rice is cooking, prepare the spice mix. Combine the ground cumin, red chili powder, paprika, ground coriander, ground nutmeg, and black pepper in a small bowl.

Add half of this spice mixture to the cooking rice, stirring well to evenly distribute the spices.

Simultaneously, start preparing the tomato sauce. Combine the tomato sauce, ground cinnamon, bay leaves and the remaining half of the spice mix in a pot. Heat on medium flame for 10 minutes or until the flavors meld together, stirring occasionally.

Heat vegetable oil in a separate pan over medium heat.

Once the oil is hot, add the thinly sliced onions. Fry them, stirring occasionally, until they are crispy and golden brown. Then, remove them from the oil with a slotted spoon and place them on a paper towel-lined plate.

Begin the layering process in a bowl. Start with the crispy onions, followed by chickpeas, lentils, tomato sauce, cooked macaroni and finally the spiced rice.

Carefully place a plate upside down on the bowl, grip firmly the plate and bowl together then flip them over. Lift the bowl slowly to reveal the layered Koshari. Serve warm and enjoy.
