These delicious and easy Crispy Chicken Chimichangas make great use of leftover shredded chicken, wrapped in a flavorful, crispy tortilla. It's the perfect weeknight meal, served with a variety of toppings such as sour cream and salsa.
In a frying pan, warm up the shredded chicken and add the chicken broth to make the meat moist.

Lay a tortilla on a hard flat surface and place about 1/4 cup of shredded chicken on one side of the tortilla.

Add shredded cheese over the chicken.

Fold one end of the tortilla over the top of the filling, then fold the sides over the top. Continue folding until the chimichanga is secure and no fillings can escape.

Heat 1/2 inch of vegetable oil in a frying pan over medium heat, watching closely to ensure it doesn't get too hot.

Fry the chimichangas until golden on all sides, turning as needed. Remove from heat and let them rest on paper towels to drain excess oil.

Serve with sour cream, salsa, guacamole, lettuce, tomatoes, and any other desired toppings.
