Preheat the oven to 425 degrees F.

Line several large baking sheets with parchment paper, each 12x16 inches in size, and set aside.

Trim the carrot tops off.

Using a mandolin slicer on the smallest setting, slice the carrots 1/16-inch thick on the bias to create elongated slices. When the carrot becomes too thin, save the ends to be used in soup or salad.
