Using a mandolin slicer on the smallest setting, slice the carrots 1/16-inch thick on the bias to create elongated slices. When the carrot becomes too thin, save the ends to be used in soup or salad.

Place the carrot slices in a large bowl and add the olive oil, sea salt, ground cumin, and ground cinnamon.
