1 tbsp unsalted butter

3 slices ripe tomato

about 1/4 inch thick each

Set a skillet or frying pan over medium heat

Spread half of the softened butter on one side of each slice of sourdough bread

Lightly toast the buttered side on the skillet until it turns golden brown, then remove from heat.

Next, place the slice of fresh mozzarella cheese over the basil pesto.

Place the sliced tomatoes over the mozzarella, and finish off by placing the second slice of sourdough on top, toasted side down.

Spread the remaining butter on top of the assembled sandwich and place it back in the skillet. Cover the skillet with a lid to help the cheese melt

After about 2-3 minutes, flip the sandwich carefully and toast for another 2 minutes, or until the cheese has fully melted and the sandwich has turned a beautiful, crispy golden brown on both sides.

Remove from heat and let it cool for a minute or two before slicing it in half and serving.
