In a large pan, add 2 tbsp of olive oil and heat over medium heat.

Add the shredded chicken, chili powder, salt, chopped cilantro, roasted corn, drained diced green chilies, and 1 cup shredded cheese. Stir for a few minutes until well combined and the cheese is melted.

Divide the chicken filling equally among 4 flour tortillas, spreading it evenly. Sprinkle an additional 1/4 cup shredded cheese on each tortilla, then top with a second tortilla to form the quesadilla.

Wipe down the pan and heat the remaining 1 tbsp olive oil over medium heat. Cook the quesadillas one at a time, flipping once, until both sides are golden brown and the cheese inside is melted, about 1-2 minutes per side.
