Fill a large pot with water, add sea salt, and place it over high heat until it comes to a boil.

While waiting for the water to boil, prepare Brussels sprouts. Wash them thoroughly, trim the ends, and slice them in half.

Add Brussels sprouts into the boiling water, blanch for 4-5 minutes, until tender and bright green. Strain and run them under cold running water to stop further cooking. Let them dry thoroughly.

On a large cast iron skillet over high heat, add diced bacon. Cook until the bacon bits turn crispy, about 7-8 minutes.

Add the halved Brussels sprouts and chopped pecans to the skillet, sprinkle with ground mustard. Sear while stirring frequently, until the sprouts are crisp, for about 5 minutes.

Pour apple juice into the skillet scraping up the browned bits from the bottom as you do. Continue cooking until it has evaporated, this takes about 1 minute.
