Mince the garlic. Drain and chop the artichoke hearts. Wash, stem, and coarsely chop the spinach.

In a skillet, heat olive oil over medium heat. Add the garlic and sauté for 30 seconds.

Add the chopped spinach and a pinch of kosher salt to the skillet. Sauté for 2-3 minutes until just wilted.

Stir in chopped artichoke hearts and sauté for an additional minute, until heated through.

Drain off any excess liquid from the skillet, and mix in the sour cream along with another pinch of kosher salt.

Preheat a griddle pan over medium-high heat. Meanwhile, butter one side of each bread slice.

Place two slices of bread, buttered side down, on the griddle. For each sandwich, layer 3/4 cup of shredded mozzarella cheese, a generous portion of the spinach artichoke mixture, and a final layer of cheese.

Place the remaining bread slices, buttered side up, on top of the sandwiches.
