Chipotle Chiles (Chile Chipotle) are made from smoking and drying red-ripe jalapeño peppers. A mainstay of Mexican and Tex-Mex cuisines, they add spicy smokiness to mole, barbecue sauce, chili, braised meats and Salsa Macha. These dried chiles are tannish brown in color with wrinkled skin, smoky flavor and medium heat level. To use, rehydrate in warm water for at least 10 minutes then puree into a paste.
