Using a meat mallet, gently pound the 6 slices of beef to make them slightly thinner. Be careful not to punch holes in the slices.

On each beef slice, spread a teaspoon of yellow mustard and season evenly with salt and black pepper.

Lay a slice of bacon on top of each seasoned beef slice, placing an onion wedge and a baby dill pickle at one end.
