Preheat your oven to 400°F.

Brush a sheet pan with olive oil.

On the sheet pan, arrange the Bell peppers, onions, and baby potatoes.

Sprinkle the kosher salt, black pepper, minced garlic, and dried oregano over the vegetables. Add in the bay leaves.

Drizzle more olive oil lightly over the vegetables and toss them until they are well coated.

Distribute the cut chicken sausage links evenly over the vegetables.

Roast in the preheated oven for 25 minutes. After this time, take out the tray and carefully flip the sausages and toss the vegetables using tongs.
