Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.

Place the prepared potatoes in a large pot, cover with water and add in 1/2 teaspoon of the kosher salt. Bring this to a boil over high heat.
3
After reaching a boil, reduce the heat to medium and let the potatoes simmer for around 15-20 minutes or until they become fork-tender.
4
Drain the cooked potatoes and return them to the pot over low heat. Mix in 1/4 cup of butter, the sour cream, remaining salt, black pepper, and garlic powder.
5
Mash the potato mixture until it becomes smooth. Now, incorporate the beaten white of one egg, 1 1/2 cups of shredded cheese to the mashed potatoes, and mix until well combined.
6
Fill a piping bag with the potato mixture. Pipe the mix onto the lined baking sheet in tight spirals to form rosette shapes.
7
Melt the remaining butter and brush each potato rosette lightly. Sprinkled the remaining cheese on top of each rosette, followed by a light dash of paprika.
8
Bake the potato rosettes for 15-20 minutes, or until they're golden brown around the edges.
9
Upon taking the rosettes out of the oven, garnish them with chopped parsley before serving.
