Remove the casing from the Italian sausage and crumble it.

Heat a large skillet over medium heat. When hot, add the crumbled sausage and cook until browned and no longer pink. Be sure to stir occasionally.

Drain the excess fat from the pan and lower the heat.

Add the minced garlic, diced tomatoes, red chilli flakes, and smoked paprika. Let it simmer for 10 minutes until the tomatoes break down.

While the meat sauce is simmering, boil the tortellinis in a separate pot according to packet instructions, then drain.

Add the fresh baby spinach and the cream to the skillet. Cover and allow it to simmer for 5 minutes until spinach wilts.

Stir in the cooked tortellini and shredded mozzarella. Mix until the cheese has melted and the tortellini is coated with the cheesy sauce.

Season with salt and give it one last stir before turning off the heat. Serve warm.
