1
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. In the last 5 minutes of boiling, add the frozen peas into the same pot, stir and continue to cook.
2
Before draining, reserve 1/2 cup of the pasta and peas water. Drain the pasta and peas.
3
In a large skillet over medium heat, melt 2 tablespoons of unsalted butter. Add the roughly chopped prosciutto and stir to coat with butter until it turns slightly crispy, about 1 minute.
4
Stir in the ground black pepper and remaining 2 tablespoons of butter, until it's completely melted.
5
Add the cooked penne pasta with peas to the skillet. Sprinkle the mixture with 3/4 cup of shredded Parmesan cheese, stirring everything together until the cheese is melted.
6
Should you find the pasta a bit dry, add a small quantity of the reserved pasta water, enough just to get the pasta moist, not wet.
7
Taste and season with a pinch of salt, only if needed. Serve immediately, sprinkled with the remaining 1/4 cup Parmesan.
8
Dig in, Buon Appetito!
