In a large bowl, mix together the all-purpose flour and salt.

Add the cold and cubed unsalted butter to the flour mixture and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.

Turn the dough out onto a clean surface and gently knead until the dough is smooth. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
FILLING

Preheat the oven to 400 degrees F.

Peel and quarter the apples, then cut each quarter into three pieces.

In a medium saucepan, melt the butter, then add the apples, cinnamon, brown sugar, salt, and vanilla, stirring to combine.

Cook the apple filling over medium heat until the apples start to soften, about 5 minutes. Remove from heat and let cool.
ASSEMBLY

Roll out the chilled dough on a lightly floured surface to a 1/8-inch thickness. Cut out 6 circles.
