In a bowl, mix the finely chopped onion with the refried beans and crumbled queso fresco. Set this filling mixture aside.

In another bowl, combine the corn masa flour and kosher salt. Gradually add the hot water, kneading with your hands until the dough forms. It should be thick and slightly sticky.

Allow the dough to rest for about 15 minutes.
ASSEMBLY

In a small bowl, combine the olive oil and warm water. Dip your hands in this mixture to prevent dough from sticking to them.

Take a palm-sized amount of dough, flatten it on your hand, and place a scoop of the bean mixture in the center.
