Papillon (the French word for butterfly) Roquefort is synonymous with long standing tradition and quality. This cheese was first granted the Roquefort PDO (Protected Denomination of Origin) in 1925 that requires the cheese is only made in the south of France, using raw sheep milk and processes handed down from generations. It has distinct blue veins with creamy, yet crumbly texture and a tangy, salty bite of sheep's milk and an aroma given by the natural caves it is aged in for 3 months to 1 year....
